How TO Cook A Perfect Steak Even When It’s Still Frozen..

It happens to the best of us — you psych yourself up to prepare dinner, then realize you forgot to take the steak out of the freezer to thaw. You could throw in the towel and order take-out instead, but there’s no need to give up just yet. In fact, some experts even argue that pan-seared steak benefits greatly from still being frozen.

According to Business Insider, searing a frozen steak then baking it yields far superior results to waiting for the meat to thaw prior to cooking. Apparently, the frozen steak did a better job of retaining moisture and cooked more evenly than its thawed counterpart. J. Kenji López-Alt of Serious Eats adds that resting meat at room temperature doesn’t do very much to improve the overall taste.

Below, Jill Urban from Little Things shares her technique for preparing a frozen steak without defrosting. Of course, you can tweak her recipe as you see fit.

 To begin, heat some olive oil in a pan and the season your steak with salt and pepper. Sear and season the steak on both sides. You can opt to pre-season your steak in advance and use a cast-iron skillet to sear if you prefer.

Then, place the steak on a baking sheet and bake for 20 minutes at 200 degrees.

Though it may be tempting to cut into your delicious meat as soon as it’s out of the oven, Urban insists you wait a littler.

She lets the steak rest in foil for about 10 minutes to retain the juices.

From there, all that’s left to do is serve and enjoy!
