Chocolate Molten Cakes

Chocolate Molten Cakes

This is my very favorite of the “mini-cake” recipes and they come out perfect every time!

6 oz bittersweet baking chocolate
10 Tbsp unsalted butter
1 1/2 c powdered sugar
1/2 c flour
3 whole eggs
3 egg yolks
1 tsp vanilla

1. Preheat oven to 425 degrees. Grease 6 (6 oz.) custard cups, dust with cocoa powder, and place on baking sheet.

2. Melt chocolate and butter until butter is melted. Stir with wire whisk until chocolate is melted. Add the vanilla.

3. Add powdered sugar, flour, and mix well.

4. Add whole eggs and egg yolks and beat until well blended. Divide batter evenly into custard cups.

5. Bake 14-15 minutes or until cakes are firm around the edges but soft in the center. Let stand 1 minute. Run knife around cakes to loosen. Carefully invert cakes onto dessert dish.

6. Sprinkle lightly with powdered sugar and garnish with whipped cream or ice cream and raspberries or bananas!
